Stuffed Zucchini with Ground Meat and Spinach

Stuffed zucchini with ground meat and spinach is a nutritious and delicious dish that makes for a perfect meal any day of the week.

Ingredients:

4 medium zucchinis

300g ground meat (beef or mixed)

200g fresh spinach (or frozen)

1 onion, finely chopped

2 garlic cloves, finely chopped

1 egg

50g cheese (optional: feta, parmesan, or cheese)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano (optional)

200ml tomato sauce (optional)

Stuffed Zucchini with Ground Meat and Spinach

Instructions:

Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the insides with a small spoon, making them like little boats. Set the zucchinis aside.

Prepare the Filling: Heat the olive oil in a pan and add the finely chopped onion and garlic. Sauté them until they soften.

Add the Meat: Add the ground meat to the pan and cook it until fully browned, constantly stirring to break it up.

Add Spinach: When the meat is cooked, add the fresh or thawed spinach and sauté for another 2-3 minutes until the spinach softens.

Mix the Ingredients: Remove the pan from the heat and add the egg, cheese, oregano, salt, and pepper. Mix well.

Stuff the Zucchini: Fill the zucchinis with the meat and spinach mixture. Arrange them on a baking tray.

Baking: Pour the tomato sauce over the zucchinis (optional) and bake in a preheated oven at 180°C (356°F) for about 25-30 minutes, until the zucchinis are tender and slightly browned.

Serving: Serve warm with a salad or a piece of bread.
